The research carried out by Vi\u00f1a Concha y Toro\u2019s Center for Research and Innovation (CRI) identified new chemical markers for the quality of Chilean Cabernet Sauvignon for the first time.<\/span><\/i><\/p>\n

This research enabled new chemical markers\u2014any chemical molecule that can be measured and is known to have a specific sensorial impact on wine\u2014for the quality of Chilean Cabernet Sauvignon to be identified, offering practical applications for wines originating from different countries and made using different production systems.\u00a0<\/span><\/p>\n

\u201cThe CRI is an open center, and this publication documents research carried out in collaboration with the Edmund Mach Foundation in Italy. Wine metabolomics or profiling of a large number of metabolites in a sample is a cutting-edge tool for untargeted metabolomic studies\u201d, said CRI Director, \u00c1lvaro Gonz\u00e1lez.<\/span><\/p>\n

In addition to identifying promising markers for the quality of these wines, the study found that Premium Cabernet Sauvignon is differentiated by its polyphenol profile.<\/span><\/p>\n
